Corbarino tomatoes are small, bulb-shaped, and famously good with seafood — their sweet-tart intensity was practically built to stand up to briny, salty flavors. They come from Italianavera, a female-owned company working in Campania's San Marzano DOP area. Founder Diana Attianese grew up watching her family make sauce from these same varieties, and she built the company to bring that tradition — unfussy, authentic, packed at peak ripeness — to tables outside Italy.
Use them the way Italianavera intends: crush them into a quick sauce for a seafood pasta, or simmer them down for something richer where their sweetness can concentrate. The jar contains just two ingredients: Corbarino tomatoes and water, so what you taste is the tomato, not an additive list. It's the kind of simplicity that only works when the tomato itself is this good.
