Everything you need to make fileja — Calabria's hand-rolled, corkscrew-shaped pasta — from scratch, and the sauce to go with it.

At the center of this bundle is a brass ferretto, the traditional rod that Calabrian nonnas have used for generations to shape fileja by hand. You roll a thin rope of dough around it, press gently with your palms, and slide off a pasta shape that no machine can replicate — ridged, irregular, and perfectly designed to hold a bold sauce.

Speaking of which: Tutto Calabria's 'Nduja Sauce is exactly what fileja was made for. Tomatoes, cured pork 'nduja, sweet and hot Calabrian chili peppers, extra virgin olive oil, salt. One jar and it'll be a permanent fixture in your pantry.

Rounding out the bundle is a bag of Molino Pasini semola rimacinata — a finely milled durum wheat flour that gives fileja its signature chew and golden color. This is the flour the recipe calls for, and it makes a difference.

Three ingredients, one region, one very good dinner.

Ferretto pair is made of brass.

Brass is best cleaned naturally! To clean brass tools, take a clean rag and dampen in a mixture of water and lemon juice, or water and baking soda. Squeeze out excess water and gently rub the brass to clean off any dough or flour stuck to the surface. Allow tools to dry in a cool, ventilated place.

Note: never run tools through dishwasher, and do not use dish soap.
